Homemade Peanut Butter Cups

If you didn't get enough of these bad boys raiding your niece and nephew's trick-or-treat bags, you can make your own!  I found a recipe here and they were really easy to make!
Line a standard muffin tin with cupcake liners.  Microwave 6 oz. of baking chocolate for 30 second intervals, stirring in between, until completely melted.  Add a spoonful of melted chocolate to the liners.  Drop the muffin tin on your counter several times to make the chocolate smooth and even.  Place in the freezer for 15 minutes.  Meanwhile, add 1/2 cup creamy peanut butter, 2 tbls. softened butter, and 1/4 cup plus 2 tbls. powdered sugar to a medium sized bowl.  Beat until smooth.  Add a spoonful of the peanut butter mixture over the chocolate layer, drop on counter to make the peanut butter smooth and even, and return the tin to the freezer for 15 minutes.  Microwave another 6 oz. of chocolate until completely melted and pour over the peanut butter layer.  Drop the tin after each cup is filled to smooth the chocolate (the chilled peanut butter causes the chocolate to harden quickly).  Return to the freezer for another 15 minutes.  Peel the cupcake liners off and enjoy.
If you plan on sharing these little bits of delicousness with family or friends, make a double batch!  You might be tempted to eat half of the first batch by yourself (although eating more than two of them at a time may put you in a diabetic coma).
