Peppermint Popcorn Balls

I am about ready to pack up my car to spend a few days at my parents' house.  I am bringing these delicious peppermint pocorn balls with me (even though there will be more treats than one family can eat in a week).
When I saw the recipe here I immediately decided to make them.  You may remember that I have a major weakness for peppermint and white chocolate together!
They are so easy to make.  Pop two bags of plain microwave popcorn and place in a large bowl.  Try to remove as many unpopped kernals as you can.  In a medium saucepan melt 1 stick of butter and 1 bag of miniature marshmallows, stirring frequently.  Add a few drops of red food coloring, if desired.  Pour the mixture over the popcorn and then add 1 cup of Andes peppermint crunch baking chips.  Mix thoroughly until all of the popcorn is coated.  Generously rub some butter on your hands (this will keep the popcorn from sticking to your fingers) and form the mixture into balls.  Roll the balls in some of the remaining baking chips and place on waxed paper to set up.
These popcorn balls are so good!  You will definitely want to make a double batch because they will go quickly!

  3. These look delicious! Where do you get the Andes Peppermint Crunch baking chips? I looked at my local grocery store and Walmart...in the baking aisles. Is there somewhere else I can check? Thanks!
